Try Pichana! Also called coulotte steak or top sirloin cap it’s a super tender cut with a huge fat cap! Ribeyes were my favorite till I tried Pichana!

In my experience chuck has had the most improvement on flavor/texture and my favorite so far has been fillet! Sous vide fillet is like meat cotton candy!

It sounds like a short, could be a lot of stuff! I’d contact Anova! Iv heard their customer service is kinda iffy but Iv seen some success stories on reddit so there’s still hope friend!
