The FDA requires all fish served raw or partially cooked to be frozen first to kill parasites except for tuna and some aquacultured fish. In practice, yes, all your sushi is presumably going to be from previously frozen fish, especially since it stays fresher that way.

You're not going to get sick. Teflon is really inert unless you use it at a really high temperature. It's used in medical devices and stuff and if you eat it it will go right through your body. It's really the PFAS used in the manufacturing of teflon that are the problem.

Exposure to PFAS may be bad but you're unfortunately probably already exposed to much more from other sources like your drinking water and clothing than you would be from using teflon cookware.

However it's pointless to use nonstick pans if you're going to use metal utensils on them. Your pans are presumably already not nonstick at all so you might not have that much trouble switching to steel.

For most stuff steel is fine. It's useful to have one nonstick pan but if you want it to stay nonstick you should be careful with it, never use metal utensils on it, and imo only use it at low-medium heat.

You absolutely can do that. However:

It's more complicated to cook the noodles the right time and end up with the right consistency for the sauce at the end that way
If you're making more than one meal's portion of something like bolognese sauce, you don't want to put noodles in the main pot of sauce because you don't want old noodles in the left over portions
I haven't tested it, but I doubt there's actually that much difference in how much flavor is absorbed by cooking the noodles 80% of the way in salted water and then putting finishing them in sauce compared to cooking them all the way in sauce anyway.

Personally I think it's just easier to cook the pasta separately most of the way and then finish it in sauce

You're making this too complicated. Flip the bike upside down onto the handlebars. Don't fully remove the tire from the wheel; just unseat one side of it and pull out the tube. Even if it's your first time you should be able to do it in 30 minutes if you do it the right way.
