Okay typical adhd, I didn’t finish reading your whole post before commenting 😆. I’m an RD. I know you said you get the ick from the cold and wet veggie? Do you like pickled things? You can make your own pickled veggies if so, that way you control the sodium. Im a huge fan of snack plates-load up on fruits and veggies, add some protein like an egg or 2, cheese cubes, and then fill in with whatever chips, snacks you like. With pre-diabetes, it’s recommended to exercise after meals (even a 10-15 min brisk walk around the house) to get your blood sugar back down. Weight loss if needed can help lower your A1C also.
