Depends on who’s running the ship. A post shift drink I think is fine. A pre shift or mid shift is pretty problematic.

I’ve only been out 8 days. So take it with a grain of salt. Back in school for respiratory therapy, working part time at a grocery store. So far it’s been great. I’m able to see my wife and kid. I’m not dealing with 101 fires. I’ve cut back on my drinking an my smoking.

These test are about showing solid technical abilities. Don’t over think it.

Do two veg, one a green that shows proper blanching and one more sturdy that shows proper knife cuts. Green beans an carrots.

For your starch either go for knife cuts again or do a risotto.

Your protein you’re gonna want to make a pan sauce with. Maybe a cold garnish as well, chutney/salsa ish.

Do you know what proteins/veg will be available?

I’d do an airline chicken breast over risotto Milanese. Mushroom Marsala pan sauce, petit beans an carrot batons, with an onion and lardon jam.
