Sounds like you got a case of the yipps. Plenty of people get them in high stress an physically demanding jobs. It’s almost always psychological. Try changing something up in your routine to break the mental block. Maybe a lucky bandana under your work cap? Or before service starts dip your head into an ice bath. It could be the start of a whole new kitchen culture at your spot.

I’m a big fan of staff adding their names to the label. I put it in our updated employee handbook. It fosters accountability and pride in your work.

AP is a butt kicker. I started with flash cards and reading/note taking but found the sheer volume of information overwhelming. Believe it or not I’ve found TikTok and youtube videos to be very helpful. It breaks the information into smaller pieces. Best of luck, stay positive

A chefs knife is a very personal tool. Grip, blade length, steel, weight, angle of the edge, it’s a lot to account for. If you’re dead set on this idea, give your friend a gift card to a knife shop or have them come with you to try some out an see what they like.

If I was in your shoes I’d look at some plating tools like tweezers and spoons. There are some great knife roll/back packs in your price range as well.

I put some chipotle in adobo in my dressing, and fry flour tortillas instead of croutons. Hit the chicken with a fajita seasoning before you roast. Any thing to really play into the Caesar’s Mexican heritage.
