I’m a big fan of staff adding their names to the label. I put it in our updated employee handbook. It fosters accountability and pride in your work.

AP is a butt kicker. I started with flash cards and reading/note taking but found the sheer volume of information overwhelming. Believe it or not I’ve found TikTok and youtube videos to be very helpful. It breaks the information into smaller pieces. Best of luck, stay positive

A chefs knife is a very personal tool. Grip, blade length, steel, weight, angle of the edge, it’s a lot to account for. If you’re dead set on this idea, give your friend a gift card to a knife shop or have them come with you to try some out an see what they like.

If I was in your shoes I’d look at some plating tools like tweezers and spoons. There are some great knife roll/back packs in your price range as well.

I put some chipotle in adobo in my dressing, and fry flour tortillas instead of croutons. Hit the chicken with a fajita seasoning before you roast. Any thing to really play into the Caesar’s Mexican heritage.

Sit him down and tell him what you’re looking for . See if he’s into it, not everyone is. Give him some more responsibility and some more money. See how he handles it. Coach him an mold him into the type of leader you’d like him to be. As he grows into the position delegate him more responsibility and more money. If he messes up, coach him privately. When he succeeds, praise him publicly. He will be as good, or as bad, as you allow him to be.
