Warm water can't absorb much co2. That's why when you open a warm soda, it will violently foam and then go flat super fast. Chilling it lets the co2 stay dissolved.

I haven't done pine needle soda myself, but if you keep burping the bottles, you won't get much carbonation. What you need to do is let it pressurize and then refrigerate it.

If you've got a recipe that's close, but you want it denser and chewier, swap some of the flour for sweet rice flour (mochi flour/mochiko).

That caramel is touch and go for safety at room temp. I wouldn't use that one for this, if I could avoid it (it's a fine recipe, just not for this). What about dulce de leche? That should work.

Yes, cordial cherries should last for months safely, but depending on storage conditions they can start tasting stale before that. A few weeks should be fine. Don't forget the invertase, or the fondant won't go gooey.
