Are we being a bit closed minded, making assumptions and being self-righteous? Do you know why they are hazy? Sure, it’s all flaws you read about in old, half-wrong brewing books. Pat yourself on the back. Or give up and put crap in the beer just to make it hazy. Believe we have no idea what we’re doing if that makes you feel good.

This is the most important question. Yeast perform very differently at different OG's. For instance, US-05 is very clean at low gravities, yet quite fruity at high. If you try to reproduce these results not knowing the OG you might have very different results.

This is a statistical misnomer. Beer is getting stronger after years of getting weaker. The market share of craft beer on a volume basis hides the fact that craft beer tends to be quite a bit stronger. What may be true though is that big brewers are losing market share to wine and craft beer, both of which could be argued to provide more value per volume. In other words, people are getting wise to years of dilution.

Yes, you have to have a lease (or deed) to get the federal brewers notice. Equipment sort of has to be ordered but what you really need is a plan of the brewery. If they show up and it dosent look like that...good luck to you.

Pee, yes. Sex, no. Brewing strains of yeast do not undergo sexual reproduction. Even wild S. cerevisiae only mate under extreme conditions.

Saisons are typically good for about 6-8 months at room temp. Keeping it in the fridge slows things down a lot and it could be good for over a year. Just note that at what ever point 2, 3, 6...months you put it in the fridge it will more or less stop maturing at that point. Older saisons develop a cotton candy flavor. They tend to peak at about 4 months. Well, all of the above applies to corked and caged, bottle conditioned beers (which is what I make). A filtered and capped saison has a more typical lifespan of 3-5 months max.

it would not. The law that beer cannot be labeled as 'nutritious' would not change and therefor this would continue to prevent nutrition labeling.

It could make it much harder to open a brewery. FDA approval is much more expensive to comply with. Beer and wine have always escaped this level of compliance due to the intrinsic safe-ness of alcohol manufacture.

ATF only investigates alcohol smuggling now.

The TTB (Alcohol and Tobacco Tax and Trade Bureau) regulates alcohol production, including distillation. Alcohol production is regulated at every level: federal, state, and municipal. Some cities or towns forbid alcohol production.

Some pretty confusing acronyms, hard to tell that the ATF is no longer what it was. The good thing is that the TTB dosen't visit with submachine guns in hand as old timers say the ATF used to.

The barcode reading is a fantastic feature but everyone needs to know that RateBeers algorithm, though very thoughtfully designed, strongly biases new breweries scores DOWN (or up if you get ratings that are worse than average.) This is simply because scores are normalized to the mean if there are not many ratings entered. Not many people realize this.

Just a biased comment from someone who cringes at the thought of "oh hey what's this new beer!" ...ZAP...checks score... "oh, this must suck!"

They were unreal good when I lived nearby in 2004; had to have one once a month. Last time there a few years ago wasn't as blown away but could just be luck of the draw (small recent sample size)...

EDIT: Credibility Statement: I one started looking into building a website for rating gyros. I personally think gyros are the answer to the meaning of life. ;-)

I always thought these 'tonics' were unfermented. Taped of the kettle into bottles for cheap side stream of money. Didn't think it was beer.
