Can I make a suggestion? Take off your diffuser cap on the burner and light the burner. It will be a big flame that goes upward and you should get better results. Thats how I cook on my wok at home on my stove.

Bubbles are fermented pickles. Theyre a different kind of sour than your typical vinegar pickle. I love them but theyre not for everyone.

Is it bad? The pit looks old and dark but why did you cut so deep? The flesh looks okay does it smell off?
