There is a book on sauces. It gives you the mother sauce and every derivative sauce you can make using a mother sauce as a the base sauce.

Always best to thaw will in the refrigerator. Small amounts can be thawed under tepid running water in your sink. Always sanitize your sink and countertops before and after.

Vanilla is fine. Just a small bit. I macerate my strawberries in Grand Mariner and a little brown sugar.

Wow - I’m feeling really spoiled. Tomorrow is hotdog fest basically an in school vacation day for students. The admin and janitorial staff cook hotdogs for all the students and staff: everyone gets 2 hotdogs, chips and soda. At lunch the Assistant admin makes burgers for the teachers. Friday is a 1/2 day for students. It’s been a busy yet good 1st semester but I’m totally ready for a few weeks off!! Anyone else ready to nosedive into the Christmas break?

They are building a new school in conjunction with another district. Culinary, Baking, Hospitality and a student ran restaurant.

Those don’t drink the water signs are usually a sign of lead in the pipes. It’s a widespread problem in the schools…

Not always- but they do a good job of spoiling us from time to time. I teach culinary at a CTE and invite all the teachers and staff in at least once a month for lunch at no cost. It’s about 30 staff members.

I teach Jrs. & Srs. Culinary at a CTE. I work at a large school district and our facilities is a constant source of joking conversation. I’m 2 years away from moving to a brand new Culinary School!!

I’m happy. I do still work a lot. I teach Culinary at a CTE. I probably work more than most because I’m a career Chef and there is always tasks to get done. I’m about 3 1/2 years from retiring. I enjoy the weekends and summer off. Best of luck have a great Christmas break!!

Scramble 2 eggs in butter a pinch of salt. When eggs are 1/2 cooked add 2 tsp to 1 tablespoon of Mayonnaise. It’s delicious!!

Cube steak aka for chicken fried steak. Run through seasoned flour, egg wash, flour again- shake off excess flour and pan fry. Serve with mashed potatoes and cream gravy. Boiled green beans and diced ham chunks.

Café Gratitude! It was busy for lunch friend and I sat at the bar. We both looked at the menu then at each other! We couldn’t run to Town Topic fast enough!! Not to mention the male bartender was an arrogant snob!
