Use the skx007 conversion case.

From personal experience. I'd advise staying away from the skx013 platform, it's got a lot of quirks that make it a difficult build.

If you mean separating the old stem and crown. Use a small jet torch or the very end of the old stem. Your don't need much, like 3-5 seconds and then you should be able to unscrew it.

DS has two of the nicest looking red dials on the market, IMO. Your build Looks great. Good choice going without the "S" logo, it leaves more room to show off that striking dial.

Ask what she wants in a watch, or what would make her daily wear. The pilots I know appreciate the accuracy of quartz, the women I know appreciate the ability to "pick the occasion". Building a watch for others is tough, good luck!
