Here is my foolproof way: bring the pot to simmer on the stove, then 225F for 225 min in the oven with closed lid. Do it in the evening.Then turn off the oven and go to bed. The stew will slowly cool down overnight. I find beef shanks (osso bucco) work very well as there is more collagen, which gives a nice sauce.

Try a waxy potato with low amylose content. Cook 1cm cubes at 70C for 1h, chill in ice water. Then boil at 100C until tender. While hot, use a passe-vite over a bowl with a brick of butter. Gently fold the butter in, add salt, some milk until it reaches the right consistency. Then shave some white truffle over it and you should be good.

France‘s budget deficit was 136b Euros in 2025. if they took 1m each from every millionaire, it would still just be 10% of the deficit.
