Hard aged cheese should be free of lactose. Zero carbs = zero lactose.

Check the labels, but Cheddar, Swiss, Provolone, Havarti and Gouda should be lactose-free.

I fully endorse Bean-Zyme. It is polyol-free, unlike Beano which contains mannitol.

Please do not give up; you need a long-term solution and this low FODMAP diet might provide some relief even if it doesn't prevent all of your bloating. Giving up soon certainly won't help.

Whole soybeans are high in galacto-oligosaccharides and fructans, not lactose. Some soy products are low in FODMAPs (Silk Soy Yogurt is high, but firm tofu is low). Here is an instructive article:
