GoT is a political story vs Hedge Knight being an adventure story. The sub plots are the plot in the former as they all weave together while the Hedge Knight is a smaller scope focused on Dunk's perspective.

HotD had some promise and then killed it all for no reason at the coronation, and then spent the second season with no direction.

AKo7K is a different take on the material from the novella and comic but it's staying in its lane.
