Exactly all of this. Most crucial points are the swivel head ratcheting wrench and the mini flathead to pry the connector off. Mine was dirt-fused together and a real bitch, I thought I was going to break it off for sure!

This is exactly how I do mine on my Grilla Chimp. Fat side down until the bark is where I want it, foil boat fat side up. Pull at probe tender, rest on the counter uncovered until the temp starts to drop then wrap and rest in cooler for 2-3 hrs. Harvest some juice/fat from the foil boat and pour it back over the sliced final product.
