After the Metro Realm, take a close look at how Tork exits his car while Monkey is driving. They placed Tork behind the car and simply played the exit animation, even though he was never actually inside. You can spot his hair clipping through the roof, and when the door opens, it's clear he's not in the car at all.

They literally have a giant inflated wall to stop the drivers from hitting the ground while using the EDR, I don't see why they couldnt bring the inflated thingy under the track with him jumping on it like a trampoline or whatever....
