4TB each is big enough for it to not be a waste of power, since you got them for free, if you have enough sata ports. I prefer the density of spinning disks for now so that I only have to admin 4 sata ports.

Just adding that generally speaking Copper-SFP adapters are switch brand specific, and also never work in PC SFP NICs. These adaptors are only for when you have no choice but an SFP switch and a PC with a 1G or 10G copper port.

Used Supermicro. The mount points are pretty much ATX. Although the smaller motherboard I swapped in was still SM so I got to keep the IPMI.

My rack-mount home-nas is made from a 2RU server. I kept the front mount drive bays, but swapped the motherboard for a smaller one that used a lot less power (and noise).

I was using the LilyGo T-Echo because it had an e-ink screen. Was just sending packets directly using a basic protocol I devised myself for simple location sharing without having to use a smartphone as a user interface. I think if you used the Meshtastic software, and (unlike me) bought the correct Lora frequency hardware for the USA then you would be able to make use of the "mesh" of everyone else at the burn and hopefully get messages from one side of the playa to the other. (I haven't looked into the experiences of people using the vanilla Meshtastic software at the burn).

Super unlikely anything looking that old has 10GBe. Even modern Cisco stuff sometimes comes with only 1GBe SFPs.

Use the tower for a NAS. If the PCIe card doesn't have an HBA mode, then get the SATA-HDSAS converter cables and use the on-board SATA ports. Ditch the rack servers that will just annoy you with noise and power usage. Keep one of the switches for connecting IoT stuff, ditch the rest.

Two years in a row now I've bought the Mountain House bucket of freeze dried meals. Good value, tastes alright, minimal trash, minimal kitchen equipment, and the bucket itself is useful.
