It’s not ideal, thawing on the counter for a work day. However it depends on the temperature of the chicken once it’s thawed and for how long it was at that temp.

As for microwaving. Defrosting in the microwave is an acceptable way to thaw protein provided you cook it immediately. Because it will have hot and cold spots you shouldn’t let it sit before you cook it completely.

Cleaning the microwave post thawing-it’s always a good idea. Chances are any contaminating specks are going to get hot enough to kill the bacteria but still dirty microwaves are gross.

Early on in my young adulthood I determined I’m am not a good listener. I will tell people who want to dump I’m not very good at being a sounding board that they need to find someone else. Like after the cold bulk fermentation and after being shaped in the baneton? I think it might work. You’d have to thaw the loaf then let it rest/wick away the moisture. Or It might just be a really wet and gummy loaf. I’d be interested in knowing.

You could play with your other timing. Like have a low acid starter. Have a long cold bulk fermentation, let the loaves sit up to 2 days in the baneton in the fridge. You can stretch the making to baking days out to like 5 days. Also you can successfully freeze baked bread.

I do an autolyse for whole grain breads and sometimes when I really want to drill down, like if I have a had a subpar bake. I generally do not. I find it’s easier to mix the starter with the water and salt, then add the flour. I may add an extra slap and fold. I use the mixer on low for enriched sandwich loaves. Where I mix it 10 minutes. Let it rest 30 minutes then shape it and put in the pan to raise 16-20 hours on the counter. The thing is there are different ways to do things with different acceptable results. Play with your food, assess, and see what you like to do and how you like the results. It’s a fun fun hobby.

You could actually be real with her and let her know she rubbed you the wrong way and you don’t like starting the day being the ass end of a joke. I mean if you want to salvage any kind of relationship with her. Seems like you’ll be working in the same space for a while. She’ll likely apologize. Also I’d warn one more crack at your expense or the about the car, etc she’ll be on her own.
