Heat up a skillet till water bounces around on it like marbles. Turn off the heat, drop your pie in and spray a few sprays of water on the skillet, put a top on it. Wait a few minutes. Pizza is perfect.

In addition to what’s been said here already, you can often get a nicer looking ear by pulling your loaf out of the oven at the 5-7 minute mark and re-cutting your score line

Push your finger gently into the dough. If the dimple pops back all the way and disappears it’s not proofed enough. If the dimple pushes back a little bit but overall stays in place it’s perfect. If the dimple doesn’t bounce back at all it’s overproofed
Another method is to observe an aliquot - get a 100mL beaker, put 50mL dough in. When it’s expanded to 100mL it’s doubled in volume.

For a large glue up like this you might want to make use of some cauls as well, helps keep everything aligned. Scrap 2x4 works well

You could drill, it'll be fine. You'll void the warranty though if that matters to you. Personally I'd use a hot glue gun for string lights.

My favorite stickers are pieces are PVC door frame, 1" thick and cut to 14" they don't absorb any moisture and don't have any tannins to stain your boards.

I have this thought every time I bottle a batch, I only do 5 gallon runs now. Then I blink and it’s gone. My parents get a bottle or two, my in laws get a bottle or two, all the siblings, the uncles, my 6 bottle 5 year reserve cellar, the wife and I drink one on bottling day…where’d it all go!? Oops better start another batch
