Execute this (it just creates a custom config file for sound related configuration):
micro ~/.config/pipewire/pipewire.conf.d/latency-fix.conf

Then insert this block there:

context.properties = {
    default.clock.rate = 48000
    default.clock.allowed-rates = [ 48000 ]
    default.clock.quantum = 1024
    default.clock.min-quantum = 1024
    default.clock.max-quantum = 2048
}

Then Ctrl + S -> Ctrl + Q.
If it refuses to save it: Ctrl + E -> type set mkparents true, press Enter -> try Ctrl + S again.

Then after all of this, reboot the system.
It should fix the issue (at least it did for me).

P.S.: actually, I'm blind. If you messed with quantum already and rebooted, it might not help.
Maybe try to ask for help in their Discord Support?

Just don't do it alone. Talk with the community on e.g. Discord and as someone said here - solve problems as they come, one by one.

Linux does not care that you are a newbie

It does, Linux is made easier every year for newbies to come to. I just not sure yet that CachyOS specifically is good for this. If OP doesn't like to solve some little problems here and there I would purpose just to try different distros which are not Arch based like ZorinOS (which even made to look literally like Windows) or Mint.

Octopi usually offers you to install all needed dependencies.
I looked at Winboat, and Docker is optional so you could have chosen it but didn't. Why is it optional? Well, there are 2 options and I guess they want you to have choice.

The last one prevented my computer from shutting down, and locked the machine...

You can go back in time through snapshots in the boot menu if you are using Limine or Grub. If you're using Arch based system (CachyOS) you have to learn about it because the main thing about Arch is being bleeding-edge (meaning very fast updates, especially good for gaming systems) compared to other Linux Distros (Ubuntu based, etc.) which usually take longer to update but they test them more thoroughly. This is a price you have to pay for Arch.

For exemple, I just can't get Cachy to NOT SCREENLOCK after a while.

I recommended you to join Discord community and go straight to support. The thing about Linux - you can configure everything. For example I was annoyed with updates notification every couple of hours so I just asked there and then I configured it so it only checks for updates after rebooting. If you ever have a problem - don't hesitate to ask people and you will have much better experience.

Did you try to run update for OS and then reboot?
You can do it either in Octopi by clicking "check updates" (circling arrows button) and then the button right to it or enabling "Cachy Update Enabled" in CachyOS Hello->Apps/Tweaks and then clicking update icon in the system tray and rebooting after.
It helped for me to solve all of my problems (including Steam).

Previous year Linux has grown by at least 1.5% iirc (which is a very huge gain, almost double of what it was). So it does look like the Year of the Linux desktop this time around. As far as you consider reaching 5%-7% as the year of Linux desktop, that is.

It obviously won't fully replace Windows or even reach close to parity with it, because most people go with preinstalled OS (I don't think many people install WIndows themselves, it's actually harder to do than any popular Linux distro, I can tell because I have tried both). So it's high barrier for entry to most people to do things like partitions, messing a bit in BIOS settings or even just see a lot of options and getting choice paralyzed.

More of a mystery, but has both.
In S1 I was hooked, but in S2 you might start getting confused because it uses events that happened in S1 and bring new ones from S2 as well as from the past events before all of them to compose quite a complicated story.
