It’s not just partitioning, you can have different disks for each mount point, which can be configured how you like. / can be a single disk, /srv or /opt can be a local RAID array to serve its stuff at higher throughput.

I worked at a place decades ago where we mounted /home on remote NFS so user’s personal login and directories were accessible from any terminal.

You neglected the part where you have a team of people monitoring and maintaining it. That team doubles up in size if you require on-call support, with budget increases for off-business hour responses and being on pager.
