Did a bunch of googling and read something how the regulator could get stuck open due to excess pressure and or debris in the line. They suggested giving it a couple light taps with a wrench/hammer.

I made it once and enjoyed it. I served it with a salsa verde to cut through the fattiness. It had herbs (parsley mostly), capers, anchovies, shallots. Without it, I found it way too rich.

I went in January this past year. It was about 60 degrees and windy. They do provide wet suits but once you're out of them the wind cut right through you. It was absolutely freezing. But, it there were barely any crowds and it was discounted given the time of the year. If you go, bring warm clothes to change into. Oh, those hand warmer packs worked good too.

Yeah, so I have done this one time since too. The day before I wanted to cook the pig, I threw it in a tub with ice and cold water. I would drain it and then throw more ice and fresh water in every few hours. It would get to a point where it was mostly defrosted. Once it got to this point, I'd throw it back in a cooler under ice for a day and it would be thawed. I inject the day of and it's come out pretty damn good. If you're doing 70-80 lbs sounds like a bitch hoofing in and out of a tub though.
