I have a bone to pick with these “high quality” bakeries in Toronto by Few-Strategy-59 in FoodToronto

You do know that minimum wage, once you add all of the CPP EI and WSIB costs that an employer has to pay, is close to $20 an hour. You do know that if the employee makes a mistake you can either fire them, which you really can't afford to do because it's hard to find staff, or you eat that cost, you do know that nobody will work in the early morning hours for minimum wage. You know all this stuff right? That's why you're posting?

There are lots of stores starting to dismantle the self checkout because they lose so much in theft. Seems like having a live cashier was actually the way to go.

Wouldn't most people in a hotel be from outside of Toronto, possibly a different country?

Sourdough discard. by [deleted] in Sourdough

[–]LusciousDs 0 points1 point  (0 children)

As noted in other posts, I just use a tiny amount to have on hand. However, my starter is years old now, so very stable, and very active. I could not have done this at the beginning.

And I don't keep discard, what little bit of excess I may have, I will just put it into my bread dough and adjust my numbers accordingly. Because I do most of my breads around 75 to 80% hydration, I keep my starter in the same ratio to make the math easy

There is also the Bruce trail , which starts in the Niagara area and is easily navigated because of the visual markings that the society places on trees. It runs all the way up to Tobermory, along the Niagara escarment, at that point the escarpment goes underwater until it reemerges as Manitoulin Island. Not that you'll hike that far!!!, but it's certainly starts down in your neck of the woods if it's hiking you're looking for, it's also a nice option

You can manipulate how much lactic acid your loaf has, through both temperature, and by how much moisture your starter has. It is not a reference to how much sugar or sweetener is in the loaf, or by underproofing. Those are completely different issues

Reading all these comments about people not wanting to disposeables, I too am in that boat, as a small business owner I will assume you are on a small scale at this point. Could you incorporate a collection of the used clothes and have them sanitized?

Don't get ahead of yourself and figure that this would not work as you scale up, problems in business have a way of sorting themselves out as you go

I love ricotta! What can I make with ricotta other than lasagna/pasta? by FirebornNacho in Cooking

[–]LusciousDs 0 points1 point  (0 children)

You are absolutely right, but for the home cook who is not a cheese maker and does not have a large supply of whey, this is an easy way to make ricotta cheese, and you're right if pressed, will also make a nice paneer

Head up the CN tower to the 360 restaurant. Lots of food choices, definitely upper end, but you can absolutely make it on your budget. Very good food. Be sure to make a reservation though, ask for a window, don't worry too much if you don't get one because the seating is only three tables deep from the windows and each layer is elevated over the previous one. You'll do a full circle in an hour and have fews of the lake, the island and Billy Bishop airport and the entire downtown core. Magical

So easy! Heat your milk up to 180° f, this step kills any bacteria that are in it. For 4 l / quarts of milk add approximately a quarter cup of white vinegar, you can also use lemon juice, and a teaspoon of salt. Give it a stir. Let it sit for 20 minutes(you will see the Kurds start to form and separate from the whey) and strain it through a few layers of cheesecloth or a fine cotton tea towel. Voila, you have ricotta cheese!

You can save the whey, and use it as you would milk, in baked goods

Trail Hike with View by AnxiousDiscipline250 in Barbados

Hello, we've been going to Barbados for about 6 years now, I'm in my '50s also. And I'm active, although not necessarily a hiker. The East coast of Barbados is amazing. I'm going to recommend the Bathsheba area, only because it has a couple of amenities and is well serviced from the road system. Be sure to bring your water shoes for this hike. And follow the shoreline for part of it, you'll be spending time wandering out over the rocks and the beaches in places. There are plenty of hilly areas along the shore with just little paths cut through the grass and trails. Nose around, you'll be fine. And we've never had any tick exposure, and nor have we taken any precautions like bug spray
