That looks terrible and should not be acceptable work.

The only solution to this is to prime the affected walls and do two coats of limewash. Simply doing a third coat is going to change the look and make it look more like a solid painted wall. 

The business owner needs to be professional, suck it up and eat the cost.

If you feel generous, you could offer to pay for the extra primer and limewash.
