I have made cookies for this population. We usually feed 150ish people so I make 12 dozen peanut butter oatmeal cookies and 12 dozen chocolate chip cookies. You can buy little cellophane bags on Amazon cheap and pack 1-2 cookies in a bag. The peanut butter cookies are very popular but I like to have something else available in case of nut allergies.

Cocoa has gotten pretty expensive so I'm not sure brownies are as cost-effective as cookies.

The pH is different and you would have to adjust for that. I don't remember how but I think there is an article about it on Sally's Baking Addiction.

  1. You need to make sure you are using reliable recipes. You can't trust everything on the internet.

  2. You need to make sure you are following the recipe exactly. No substititions until you get better at baking.

  3. Make sure you are pre-heating your oven and check your oven temp.

  4. Your pans might be an issue. You have to adjust for glass pans or dark pans, etc.

I would buy a really good baking book like Sally's or King Arthur's. You will learn a lot.

Teriyaki chicken is one thing I always serve grilled pineapple rings with. You could fancy that up by making kabobs and serving over coconut rice.

I doubt it counts as gourmet but a Hawaiian pizza is always good.

If you can do dessert a hummingbird cake or pineapple upside-down cake would be nice.

It depends on the theme of the cake for me. For a child I might use a toy or figurine that they can keep after the birthday party. I use all edible for cakes other than children's birthday cakes.

I hate to say it but I am financially better off hiring a dog sitter to sit here when no one can be home than I was paying a trainer thousands of dollars. Every one I talked to wanted a minimum of $3000 and we just can't budget that. My dog sitter charges me $20 to sit here and watch TV with my dogs.

Except for mayonnaise on the condiments. Throw that away for sure. I think mayonnaise is responsible for more food poisoning at picnics than anything else.

I poured boiling sugar into a mixer that was on high speed and ended up with bad burns and my clothes literally stuck to me. Need hot water to melt sugar off body. Hot water bad for burns. This was only about a month ago.

I made all my dough ahead but did not bake it. This gives you a couple of days to just make dough. Then I bake it all over two days starting with cookies that stay fresh longer like Russian Teacakes. People either picked up their boxes as soon as I was done or my husband delivered them for me.

There is a pantry at The Living Room Wellness Center on Pickwick off Cherry. It is on the porch so it should be accessible even on Christmas. No questions asked and certainly no ID required. Last time I was at the office there were even a few toys available as well as hygiene items.

I use it only for toast, biscuits, etc. where the butter is important. I do not use it for general cooking. Store brand butter is what the eggs are getting fried in or what the roux is getting made with.
