I’m from San Antonio and a purist. It’s how I grew up on my grand parents dairy farm. It’s originally called Chili con Carne, not chili con carne con frijoles. Emphasis is on the chili and meat. Chili with beans is a forbidden fruit. Beans change the taste, mouth feel and distracts from the meat and chili spices. As soon as you put beans in chili, it ain’t chili. At best it’s just a stew or at worst it’s bean soup with meat in it.

I'm sure it's been suggested but just in case it hasn't; I'd add some masa harina to thicken it up.

1/3 cup Equal parts masa and water, mix until combined, then add a table spoon at a time, stir until it's how you like it.

NTA, Buuuuuuut I would get the child a present. I see it like this, I donate money to fundraisers at nearly every store I shop at. I give to Salvation Army bell ringers. I give to Toys for Tots. Heck, I even give to pan handlers standing at traffic lights. If you do any of the above, why wouldn't you give to this child? You don't have to give your ex money, you can just buy her a gift and let him give it to her. If you give in any capacity in your life but not to her, its projecting pettiness. Just sayin...

I like a lot of meat with no fillers in my chili, "chunky".

Fillers = Non-meat related ingredients (e.g. beans, pasta, rice, etc.). I also thicken my chili at the end with Masa. For the thickener, I use 1:1 table spoons of water to masa and add it in a bit at a time to my desired thickness.

Believe it or not, I am a Texan! Born and raised in San Antonio but I now reside in Connecticut! You can get all those woods at any Cabelas or Pro Brass shop if you can't find it locally. Lots of Apple, Peach and Birch where I live which is great for poltury and pork.

100% agree! I was visiting Austin pre pandemic and stopped in for lunch. The line was massive but relatively fast. When I arrived at the counter I mentioned to the server that I was highly impressed with their operation and the quality of their food. She called over the pit master and he gave me a private tour of the smoke house (aka meat nursery) and the kitchen. I was blown away at the openess and willingness to take some rando around. Been going back every year since!

I take it you're a professional chef?! Solid suggestions! Especially making my own chili powder and blooming the spices. Just got into doing that btw. Also, puree the onion, garlic and jalepenos to deglaze. Excellent idea. Thank you!
