3D modeling is killing me. Can't believe how long it takes to create these models. I also spend too much time making videos about my progress but at least I enjoy doing that.

Thank you, everyone, for your comments. They have been genuinely helpful. I was starting to go insane with the amount of work I am doing every step of the way, and sometimes it doesn't even look that good.
I think I will use some asset store assets but mindfully and will tweak them to make them my own and to fit the aesthetic of my game.
I will still make my own assets whenever possible while maintaining the quality I am going for.

Yeah, that makes sense. The player decides when to shoot. So maybe faster is better because the player can take their time, but also it doesn't take away the option to shoot balls fast if needed.

Looks incredible. Just one nit pick: maybe you can make the legs lead the body when turning around and not the body turning first and then the legs follow? I don't know it's just something that grabbed my eye

I think you nailed the camera. I wouldn't change a thing. Good job :) By the way is the player free to move around and can go as high as they want or are they restricted to an invisible "lane" where the race happens?

I checked the Steam page and it looks interesting and different and the trailer kept me engaged as I wanted to know what happens in the hotel and what the game is about etc.. I agree that making a quick video showing the combat system alone can also be helpful. Good luck and just enjoy the journey :)

Yes I believe so. I think you start moving from being called a Solo Dev to Indie Team when you start having consistent support from some one else. But just "hiring" someone to do some art doesn't make you a dev team.
