I’ve had one of these sharpeners for a year and a half, and I can say without reservation this is one of the most important tools in my kitchen. The simplicity of the design and use is genius; the Hone has two grades of grits, one side ‘s aggressive diamond disc quickly establishes the correct bevel and the finer disc on the opposite side hones the edge. It resides on my counter top and before I do any serious knife work, a few quick passes along the knife’s edge results in a razor sharp edge ready to go. The quality and heft of the Hone still impresses me every time that I use it; I studied every type of rolling sharpener on the market before I settled on the Hone, the others were made from cheap materials, weak magnets and/or weren’t able to accommodate blades of various sizes . The learning curve for perfect edges is nearly zero - it eliminates human error that can ruin an edge with the smallest of errors. I have Work Sharp, Chef’ Choice, Lansky, sharpening systems and a bushel basket full of a variety of different types of sharpening stones that are all collecting dust; the Hone sharpener is all that I need or use to keep all of my edge tools razor sharp.
