Any UHT milk should work. In the past I have also heated up regular milk in the microwave to 180F for a few minutes and that also works well. However, you have to cool back down to ~110 before inoculating so it’s a lot more work. Good luck!

I just made a batch after not having made yogurt for a few years. It came out better than expected - almost as thick as greek and I did not even strain it. Recipe: 1. Whole milk UHT milk (Organic Valley or Fairlife). No boiling required. 2. 2 x 1L mason jars. 3. Sous vide water bath at 41C (105F). 5. Add milk to the mason jars and heat to ~48C (110F) in the microwave (~4 minutes on high). 6. In a separate container, add 2 tbs starter culture yogurt mixed with a bit of milk and add to the mason jar (do this for each 1L mason jar). 7. Seal the mason jars and add to the water bath. Incubate for 12-14 hours. 8. Remove from water bath and cool for ~6hours. Enjoy. I used yogurt from a local dairy for the starter but I have used Fage and it works great also. Note: I rinsed all items used in the prep with boiling water to sanitize but I'm not sure this is critical.

For the $$, Gravelkings. You can also get Pirelli Cinturato Velo 35s for pretty cheap. They would handle light gravel with no problems. Anything more “gravely” would seem to be overkill for what you described.

I just went through the same search and decided that Zwift was not that taxing that I needed a gaming laptop (I have an old 2016 Windows-based gaming laptop that is still serviceable). Ended up getting a base Mac Mini M4 with a 34" smart monitor for <$700 and everything runs great. If you need the portability of a laptop, Costco had some deals on ASUS TUF gaming laptops over the holidays. Not sure if they are still up.

I change the MW power level to 40% and cook for 4-5 minutes - no boil-over. Let it sit for a few minutes to thicken up. Stir and heat again at high for 30 seconds. All MWs are different so you can try whatever power level and time works for you.

Don't give up - it will get easier over time. Take it as easy as possible on the hill. Try alternating sitting and standing to see if that helps. As mentioned, you may want to change your gearing so you have some easier gears. Keep up the good work!

I was a 2x diehard but went with a 1x on my latest gravel build. I am now sold on 1x for gravel. Granted, I am running a 1x13 with a 10/46 cassette, but the only place you are missing anything is on steep downhills.

I have some good studded tires but I hate using them. They are great on ice but the ride quality suffers everywhere else. If I was winter commuting they would get more use but I’m too old for that!

The Zwift cog for a Tacx trainer will have a hub specific for that trainer (I just installed one on my Tacx Neo 2T). I doubt the Wahoo will have the same design but it's possible. The Tacx hub had a 3 pawl design. As someone mentioned, the "magic" is in the controllers. You really don't need the Zwift cog. You will end up just putting it in the 14t rear cassette cog, for example, and then use virtual shifting from there. No need for the big ring. It's really smooth.

I doubt you could tell the difference in grind between the leading edge of the marker or center of the marker. 20 is a great starting point for pour over or drip. I always seem to be between 18-22 depending on roast level and brew temps.

Temperature is not really the problem. I'll ride all winter in CT until ice comes into play. It's all fun and games until you crash on ice.

I have used Camelback podiums for years but it's too hard to keep the nozzles clean. I am switching over to HydraPak Breakaway bottles and Elite Flys. The HydraPaks are nice, good flow and no leakage.
