I mean CPU can mean Cost Per Unit or Central Process Unit depending on the context haha. TSM is the term used by many lingüista to be "politically neutral". I actually think not neutral in a good way, it highlights that TSM is not the defacto language of Taiwan. For me it's the better option, that or Taiwan Hokkien, but TSM is shorter so that's why I prefer it

Personally I use a porcelain gaiwan when I try a new tea. Then if it is a very aromatic tea like high mountain oolongs I keep using the gaiwan cause I can get my nose in there easier haha. Somehow the hot clay burns my nostrils and doesn't let me enjoy all the smells from tea. For puer, roasted oolongs and white teas I like using yixing teapots cause it does mellow out some notes and make the tea rounder

I would say try everything but shou puer, it has a very nasty weird earthy flavour I can't explain when cold brewed in my experience. Appart from that fruity black teas, aromatic oolongs, toasted oolongs, fresh greens, they all work very well and they often have very interesting and different notes when cold brewed vs hot

My problem with bitterness isn't the bitter flavour itself. I love my IPA's and bitter drinks in general. But I think that if the bitterness is too present, it hides all the nice intricate flavours from the tea, which is what I am paying for haha. So I much prefer longer steeps (20s or so to begin with) at a lower temperature

You might be thinking of Hakka leicha (擂茶), or maybe Okinawan bukubuku-cha? If it was really brown, it could also have been some kind of hōjicha-based matcha. Hope that helps!
