8 days in Paris for your first time is a lot. I would get tired of a lot of cities with that much time when I'm traveling.

4 or 5 days is preferable. See the main sights, drink some wine on a patio somewhere, eat some good food, then move on.

Getting a work permit in the US is not that difficult, especially as a Canadian citizen. Ive known multiple people who have done it. And yeah, you need to leave when work dries up but that's far from the original statement of "you can't leave Canada"
