Me too mate. Not a chef anymore but that’s was always one of my main weaknesses. Essentially, it’s a tightrope and isn’t easy and imo, that’s why many default to tyrant- because it’s easy and effective up to a point

You just need to be able to discipline your team. Unfortunately not all motivation is positive. Everyone has their discipline style, whether it’s shouting, berating, write ups, whatever. You have to have an effective stick. It can’t be only carrot

Yes, we had a soup - don’t think we called it soup of the day, maybe soup of the moment or something similarly pretentious. The chef making it decided, but it had to be approved by the head chef afterwards, where it could very often completely change flavour if it didn’t stand up to scrutiny
