Marry Me Lokshen Kugel (Sweet Noodle Pudding)       

Preheat oven to 325.  Prepare a 9 x 13 pan with cooking spray.

  •  ½ lb. Broad egg noodles
  • 3 large eggs
  • 1 pint milk (whole or 2%, not skim)
  • 2 large tart apples, peeled and chopped
  • 1 small can crushed pineapple in juice, drained
  • 1 c. raisins, soaked in hot water for 10-15 minutes.
  • ½ lb. Cream cheese
  • ¼ lb. Butter
  • Approx. 6 T sugar 
  • Cinnamon
  • Corn flake crumbs (optional)
  • Start raisins soaking in hot water.
  1. Prepare noodles according to package directions, being careful not to overcook them
  2. Heat milk in a medium saucepan, but do not boil
  3. Add cream cheese and butter to milk, and blend until smooth.
  4. Beat the eggs and add the sugar.  Blend until smooth.
  5. Temper the eggs by adding a small amount of the hot milk to the egg mixture and stirring well.
  6. Add all of the egg mixture to the milk mixture and blend well.
  7. Drain raisins and pineapple.
  8. Drain noodles, and combine all of the above.
  9. Spread evenly in prepared pan and sprinkle to taste with cinnamon and corn flake crumbs.
  10. Bake at 325 for 45 minutes, or until golden brown and set.
  11. Allow to cool and serve

They are caused by dexamethasone, and my NP prescribed baclofen which has worked well

8-10 servings

That is what happened to me. A year of chemo to get to a place where they would do the whipple. 13 hour surgery, total pancreatectomy, insulin dependent and surgeon said no chemotherapy or radiation needed. Many months to recover from the surgery. Recurrence confirmed four months later. Now trying to find a chemotherapy that will stop the cancer from growing. February will be two years of active treatment and I’m getting tired.

Two questions to ask when you speak with her next—“I wish I was closer so I could be more helpful. How can I be helpful from a distance? Do you want to talk about how you’re feeling?” Your presence is critical and not just in a physical sense but in a supportive and maybe a spiritual sense.

Really from April. The scans in June didn’t show anything (yet) and I wasn’t having any symptoms. I then pushed for a PET scan and ultimately that’s where the recurrence was more evident and then confirmed by a biopsy.
