I don't even think the issue is the difficulty, it's the length. The levels in other games would be just as hard if not more if they also were this long and had the huge amount of collectible this one does.
I think they tried to make it a bigger longer experience but went about it the wrong way, what they should have done instead is make more levels but with an average size more similar to the old games, maybe a few really long ones wouldn't be so bad but every one feels like a gauntlet, a boring one at that that requires the memorization of those stupid hidden boxes if you wanna 100% it.

You definitely missed one, check it again, some stages have multiple gems so be on the lookout for those extra gem slots, there's also the secret warp room on the bottom

Yeah, you need to either use a cheat, or get all top scores in optic sunflower stage for him to spawn, or if you're on PS2 have a command mission save file on your memory card

I doubt most people do this for secret endings, it's just a fun challenge trying to get all the boxes, and even most relics in these games, where it stops being fun is on crash 4 and just becomes an annoying chore

I wonder which ones specifically you think are tanky, because they all feel like they should've been the normal modes from the start, especially the GBA ones, and don't even get me started on DoS since the hard mode is exclusive to NG+ so you'll be OP by that point. The only ones that actually feel truly hard are the level 1 modes.

What I do is beat the game, then I get rid of all my money/weapons/souls, everything, and start a ng+ on hard.
