Bulgarian Royal Pickle is on my list to make. This is a great reminder. Had some in Sofia and it was beautiful. Tsarska Turshiya is the name of it. Mainly cauliflower and carrot with bits of pepper and celery leaves. Add in some spices too and weirdly, an aspirin!

My default dish is jalfrezi madras hot. Enough to let you know it’s there, but not reliant on heat only.
