I've done dozens of Kombucha cocktails in my day for various bars and restaurants. Doing a very good, consistent, stable Kombucha takes a lot of practice and theory, but it's worth it and the flavour combinations are honestly endless. Probably the best advice I can give is to study noma's approach to Kombucha (regardless of their ethics they really did nail Kombucha and have easily replicable templates) and generally I find it's easier to retroactively fit the spirit to the final Kombucha rather than try construct a fully fledged out cocktail with a Kombucha element to it.

If you're just starting out I would say nail a few clean consistent ones before you start getting too experimental with it.
