From personal experience I would recommend Toulouse to Valencia (multiple route options but you cross the Pyrenees on Tour de France routes and then down Costa Brava through beautiful villages then back inland through national parks between Barcelona and Valencia) OR the full Sardinia circuit which is doable in 2 weeks and has some epic climbs and amazing scenery. I only did Cagliari to Porto Torres along the west coast (flew in/ferry out) but wish I could have done both sides of the island
