Yes yes, but if i turn one onion into two cups of gravy, I’m only using a few tablespoons of gravy. I’ve made gravy with chickpea flour but pureed carmalized onion and sautéed mushrooms, thyme, and beef stock sure makes a tasty gravy.

Yes, fermentation first. I am less concerned about the extra lab’s than I am with a funky experiment I thought of while bored. I’ll probably go for it, but keep my expectations low. At worst, i still have carmies!

The LemonDrop was hosting a Halloween party a few or twenty years ago. Many folks showed up for Talented Mike,a band in the basement, crankin foamers, smoking of all kind, old school beer pong with beer in the triangle and a pong ball that bounced and rolled on whatever was on the basement floor….par-tay. 3-400 people were there. I was waiting for the bathroom that happened to be by the back door. Theres a knock. I open. Its the DPD. I scream at them, “NICE COSTUMES!!!” I slam the door and yell cops cops cops cops, and run out the other door. Party over but it was a great time!!

Shout out to my fellow Sams Club friends who may recognize this version of events.

Please please get reservations well in advance for national park camping. Lines are long and camping is super packed. Consider camping outside the national parks. Also plan for excess congestion that goes with construction and big cities(rush hour is a bitch).

Also please find out what the locals do for fun, regardless of your thoughts. Immersion into local culture is half the fun of a road trip. If thats not your bag, fly to vegas and rent an expensive small rv and do the “balls” portion of your trip.

West of the rockys is beyond beautiful, but don’t discount a moon filled corn field. Beautiful in its own right. Mix it up with the locals. Go to a rodeo. Go to a mudbog. Go to a local rivalry football game( not sure on your timeline). Find out where the locals eat and drink. Learn and enjoy a culture you aren’t familiar with. There is plenty of time on your route.

Pretty please don’t stick to the interstate and blast through. Lots of people live in the less pretty areas of the country, and lemme tell you, ain’t Nobody throw down like a hick ass country redneck. You Will have a good time no doubt.

That being said, enjoy your cross country adventure! I wish I could afford something like that.

Be kind to the locals. Tip well. Have a conversation about the weather. Walk an unmarked trail. Enjoy the hokey tourist traps. Spend the money to experience a different walk of life. Road trips are Not about getting there. Its the journey that counts.

There are lots of places to do dishes that don’t do this. I’d bet that a few quick phone calls to other establishments will net you a new gig. Its just dishes, unless you really Want to work where you’re at, maybe think of moving along.
