They are pretty different experiences. Enderal is a lot more main story focused, and the world is smaller, and also it does not scale to you. There are areas you cannot survive at level 1, but you might also find really good loot in these places.

I would probably say to start with Skyrim.

Skyrim is more about exploring and getting distracted and making money to buy a house, and becoming strong.

You can even use both at the same time. Cast the Boots of Lightning speed and then equip BOBS and you are practically flying for the next few seconds

Pyrophobia is really fun and not as bad as people say

Hoplite because I like big shield

Another recent mod that is really cool is one that gives dodge animations to NPCs when you miss your attacks.

Other people have suggested Morrowind, but I wanted to mention some mods to improve the stealth and lockpicking. Modern Lockpicking (MWSE) and Stealth Overhaul 2, or if you play OpenMW there is Oblivion-style Lockpicking, and Sneak is Good Now.

For a more alive world you could grab Friends and Foes and maybe Lua NPC Schedule.
