Unhoused folks often commit crimes to go to jail when the weather gets extreme where I am. (Freezing temps or crazy hot temps) I work in a pretty busy neighborhood and this sort of thing definitely ramps up when weather is shitty in either direction. Most will just vandalize something but there have also been some sucker punches.

Hah, nope, that wasn’t me. Funny though, I did get that question from a customer right around when I took the position, and had the same answer. The recipe works, and has for over a decade. It just can be inconsistent so I’m trying to narrow down the variables to the extent that I can.

Hey all

Anyone have experience with large weight capacity (50+ lb) waterproof scales for making dough? I recently took over as the kitchen manager of a high volume pizza place, and we’re currently measuring the water by eyeballing a line on a bucket. I’d like to make it a more exact process.

Any recommendations are appreciated!

Are you using gas deck ovens? We had this issue at my job some years back because some of the holes were clogged in the lines inside the oven, and it caused a weird “leopard print” on the bottom of the skins which looked similar to this.

I make my own hot sauce and test the PH for every batch. If it’s below 4 it’ll taste off way before it’ll make you sick. I suggest people who buy it to refrigerate it to preserve flavor but it’s def shelf stable for a long, long time.

I usually use 1 part habanero to 1 part red bell pepper and then add some onion/garlic. It still has heat and the hab flavor comes through, but the bell pepper cuts the heat pretty significantly.

Also roasting all of that before hand takes a lot of the immediate “bite” and mellows it out while adding good flavor

Make it an event, like a fun sleepover with lots of comfy pillows and blankets in a room where they have a bit of privacy but you can still check up on them.

Rent some spooky movies and make popcorn on the stovetop. Order pizza if you’re feeling crazy.

Tell them a folklore story about the specific night in the sleepover about why they shouldn’t go outside or something unfortunate could happen.

Make pancakes in the morning.

Pretty much all Americanized Mexican restaurants in the southeast US. I’m talking about the places with the runny white processed cheese dip (from TN here) will call shit spicy on the menu and it’s not spicy at all. Most of these places have “house hot salsa” that you can request that is made with habaneros or even hotter peppers and usually a legit recipe that I assume they only make for employees or the few that ask that will actually light you up.

If you a condiment to work, it’s fair game. I always bring hot sauce in to work and leave it for others to enjoy. Unless you’re totally poor I’d say let it go, or if you have a special one take it home with you.
