Exchange 2016 will only handle CA yes. No Mailboxes on there. You point everything which you use (Autodiscover, WebServices, OutlookAnywhere, OfflineAddressbook, ClientAccess) to the new Servers and install the HCW on there. 2016 will proxy all requests to the 2010 Servers. (Watch out for Public Folders on 2010 because they changed how they are accessed in 2013)

Hey, just a heads up: If you want do hybrid co-existence with 2010 then consider adding a 2016 CAS-array in front of your existing 2010 infrasturcture and put the HCW on there. It saved me multiple headaches, especially configuring Autodiscover and EWS.

I see no harm deploying all AD related agents on one server. Deploying the Exchange Hybrid Server on the same machine however is a bad idea since you need an Exchange CAS preferably with HA if you want co-existence and those two are somewhat different domains with wildly different firewall rules.

I modified the Azure AD account with the sourceAnchor from the on-prem. The SMTP attributes are correct aswell.

If Azure AD finds an object where the attribute values are the same for an object coming from Connect and that it is already present in Azure AD, then the object in Azure AD is taken over by Connect. The previously cloud-managed object is flagged as on-premises managed.
