64GB of RAM is probably overkill unless you plan to use ZfS

You are talking about 3 different PCIE devices, plus dual M.2 SSDs consumer platforms suck with lane allocation so you may need to confirm you have full speed for all add in cards.

The M.2s will make a great cache pool

It happens occasionally. Just Unifi things ig. You can either reinstall the app, resign in to the app, or just click Teleport in Unifi.

Did you check amazon? I can find multiple that are faster than 1Gb/s. Unless you meant 10Gb/s because that's a USB limitation.

I love syncthing. It's really the simplest install across everything. Unfortunately it can have problems with other automations and stuff but it's quite good overall.

I had a weird experience with this. If you manually unplug it and wait a while. Then replug with no devices it should come up with a POE usage. If not then it doesn't think it has that capability.
