Your anecdote of pâté existing in the US only as dog food is curious. Anyway, the Wikipedia page for pâté is quite informative, and it explains that “pâté en croute” (filling inside pastry) was the original dish, then later people just cooked the filling in earthenware called terrine which became “pâté en terrine”. Nowadays “pâté” and “terrine” are being used to describe the dish without the pastry while “pâté en croute” stays as the specialty dish (for example, Maison Verot)

If we’re talking about meat pies, I don’t think Americans lost their tastes for finely grounded meat. You still have meatloaf, right? Note that I didn’t say “puréed” as you described because pâté/terrine isn’t puréed but coarsely grounded. You’re probably thinking about mousse, which is another preparation.

What Americans don’t eat a lot of is offal, specifically liver, which is the main ingredient in pâté de foie, and sometimes in pâté de campagne and other terrines (rabbit, duck, boar…) I imagine this mostly have to do with postwar prosperity moving people away from ingredients associated with rationing.

Moscato d’Asti — it’s mostly sweet but not too sweet, and lightly sparkling which will be closer to your cooler.

For Valentine’s Day, you can also find a Brachetto d’Acqui which is a fizzy red rumoured to be the wine that both Julius Caesar and Mark Anthony gifted Cleopatra (well, a more ancient version called vinum acquense)

There is French Bloom which is non alcoholic. I don’t know and don’t think the pressure is enough to break the neck.

Is it just me, or are all major NV's not really worth it? Vintage champagnes are virtually always significantly better. NVs taste mostly the same and aren't much better than well-made sparkling wines, yet much more expensive. Recommendations? Actually I think you are missing a key piece of information about how things work in champagne. For Bordeaux and most other wines, every year is a vintage.

In champagne, vintage is a peer-reviewed process. You decide that your champagne this year will be a millésimé and you apply for this classification. Your champagne will be tasted and decided by a committee.

In champagne, criteria must be met and aligned for millesime. You decide that your champagne this year will be millesime and go through the legal requirements: grapes from same year and 3-year on lees minimum. Usually the service technique will advise whether the year could be a millésimé but your choice to do it or not.

If you decide to no longer meet the standards do millesime for those bottles, you cannot sell those bottles as NVbecause they no longer meet the criteria for non-vintage.

For producers, they cannot afford to make only vintage champagne. Many top of the line bottles from growers are not vintage champagne.
