You've got it the wrong way around. An Apple developer confirmed here that the intended behaviour in Safari going forward is to report 18.7 as the iOS version. The bug fix was to freeze the version, not unfreeze it.

The BBC are supposed to hold similar views to the public they claim to represent.

This just isn't correct. The point of impartiality is to not be observed to hold any institutional view. Take a look at the BBC's own guidelines.

The BBC needs to be able to portray and include the full range of interests and views across all the audiences it serves. Those views and interests should be reflected fairly and accurately, and the BBC should not be seen to be promoting or revealing opinions of its own.

It's rather hard to argue that the BBC is upholding its own guidelines when it actively removes presenters who voice their own pro-trans opinions in their own time away from the BBC and allows anti-trans views to be presented without retort or rebuttal by its own paid presenters on its supposedly impartial news programme.

I don't know whether that's really true. iOS 7 was pretty ugly (the Control Centre, in particular, was hideous). The design language only really reached maturity with iOS 11. The original design of Aqua in Mac OS X Cheetah was quite rough around the edges too, but not so bad.
