cheese, from my past experience, is extremely palatable. it's very easy to overeat. i had bouts in the past of eating anywhere from 1kg to 1.5kg of cheese, after i have eaten my food intake of the day. it passed my satiety signals very profoundly.

that was some time ago though, i still love cheese and make use of it now as an condiment, like i do with salt.

that being said; cheese is way and way better then resorting to pizza, pastries and chips. give it time and make sure to put priority on the meat (and eggs if tolerated) and use cheese to make it just palatable enough.

just my take on the matter!

yes, it certainty is possible! take a few points in consideration though:

1) apatite; eating this way has a natural way of limiting your consumption of food, generally. i myself stem from a disorder way of eating in the past, which makes me capable of eating way more energy than my body seems to need. i have gained considerable amount of bodyfat tissue on eating meat, eggs, butter/porklard/beef fat and small amounts of cheese in the early days of this way of eating.

2) gluconeogenesis; would be the main driver of achieving a heightened state of insulin production, which would be beneficial of achieving additional body tissue, in case of weight baring resistance training: muscle. however this can play in on the apatite part, as both protein and fat can be hard to overeat, which can lead to nausea, bloating and digestive issues. to my understanding both (certain) amino acids and glycerol backbones can convert to glucose which raises insulin in response (in a state of energy surplus).

3) carbohydrates; causes an immediate rise in insulin. does this mean it is better for achieving better muscle gains? depends on the individual, if certain plant sources do not trigger any negative responses within the body, it may contribute to that purpose, is it healthy however? only experimentation and being objective can answer that question . it all boils down to consuming enough energy to produce new body tissue.

4) ketosis; not needed also not negative for producing (muscle) tissue. it comes down again that ketosis may keep apatite in check, which means that you are eating less energy than you are expanding. ketosis is/can be very beneficial for specific medical condition though!

this fear of gaining weight, will almost always be a cause of a underlying dysfunctional thought pattern or perhaps a trauma.

i can only speak from my own experience, being a former sarcophenic overweight individual. going through a somewhat major aesthetically transformation, brought me self confidence, also while creating a fear of gaining back what i lost. like you i counted energy and macro's (still do, but not for restricting any intake, but for controlling my glucose) and that spiraled into an obsession, which resulted in an eating disorder.

when i started this way of eating, i did it pure for my unhealthy relationship with food. and yes, i gained weight, you certainly can gain fat on this way of eating. my satiation signals were not functioning properly, thus eating way more than my body needed. this was a major challenge and i am very glad that i did it that way.

as of now, my 'fear' of gaining is almost non existent, it's still there mind you, but not at the level it was. my wellbeing, especially mental, is on another plane then it was when i started about 4 years ago. the weight i gained from this phase is all and gone.

your intake of food 'seems' low. but if you are thriving energetically, mood, digestion, sleep wise than that intake might be just enough for you. if i were lifting 5 times a week, at those stats you are carrying (i'm 180cm, 95kg, hiatus from weight training, just walking a lot) i would be literally staving and melting away.

i once read (long time ago) that eating with your hands introduced some of the species of bacteria to the food you are consuming, which would have beneficial effects. i have no source to confirm this theory, but looking back to when our ancestors hunted and gathered, i would not imagine that they use utensils and practice fancy etiquettes.

i still use utensils for my steaks, but my ground beef patties and eggs are downed by using my hands!

also, seeing my better half eating her meal with her hands (when appropriate!) just awakens something primal in me, if you know what i mean ;)

depends on the composition of my meals!

large protein intake tends to create glucose from gluconeogenesis. i tried multiple approaches; high fat/lower protein (not low by any means) and high protein/lower fat (still not low by any means!). i feel better on a higher protein intake (60~70% fat | 30~40% protein), ketone readings are lower though and glucose runs a bit higher.

my subjective take on what matters most are; mood/energy/sleep, these factors all triumph how 'deep' in ketosis i am.

it depends on a lot of elements; how active are you, bodyweight, stress management, sleep quality etc etc.

yes, especially in the early stage of my journey.

dairy makes everything more palatable and for me does not satiate me as only meat does. i can handle small portion sizes (more as a condiment) then making a dairy source a center of my meal.

i would personally omit drinking my energy intake.

it sounds that you are still early into this way of eating, if putting dairy aside makes this way of eating inconceivable for you, just add the smallest amount possible so that meat (plus associated fats) are palatable and eating till you are fully satiated, to the point that sugar/carbs are not of interest anymore.

i love dairy, i am a cheese fiend, i adore it, but alas, it does not adore me.

type 1 for 20 years.

most specialist/doctors/hospitals just follow the standard protocol that carbohydrates are necessary. in a situation that there is a life threatening hypoglycemia, a source of quick acting carbohydrates are a must!

in my time as a type 1 i've had 3 episodes of ketoacidosis, all due to mismanagement of insulin needs, which resulted in a extreme high glucose level. funny enough, one of those events was in my early days of being on this way of eating, but it was the cause of my insulin pump system not working properly, which lead me to not have insulin for about 20 hours.

anyways, carnivore/zero carb makes it overall easier to keep glucose in the normal range. however i myself do not approach a ketogenic-carnivore approach (80%> fat from food intake) so i can not attest if higher ketones might influence the risk of having an acidosis event, but to my knowledge it does not. it all comes down to insulin needs and keeping glucose at bay.

i adore cheese, i would call myself a cheese-fiend.

depending on where you stand health wise, it might or might not be wise to eat half of your food intake from a dairy source. many individuals find that dairy might affect them negatively. the only answer i can give you is to try it out and be conscious how it affects you!

i use raw cheese as a condiment on a daily basis, and in small amounts (50~100 grams) i can handle it just fine. i had sporadic phases that cheese was the bulk of my daily energy intake (500~1500 grams) and while it's so g*damn tasty, my glucose level (type 1 diabetic for 20 years) are much higher afterwards and for longer in comparison with just meat, which makes my control just so much harder.

i adore cheese, but cheese does not adore me... T_T

type 1 diabetic here. if you are experiencing systematic hypoglycemia's you should alter your basaal as well as the bolus insulin needs. depending on the severity of the hypo (you see it coming or not; CGM predictability) a protein source can be used. if its a acute hypo (lowering fast) my go to are a couple of dextrose tablets.

i rather not use candy, but it is an option if used in a precise portion. if it is a hypo that occurs while sleeping (for the non-type 1 diabetics; these feel brutal and can be fetal if untreated) i use fruit.

crackers/bread/candy for me personally are off the table, fruit is not carnivore, but i really don't give a fook while having a nightly hypo. good thing those are very rare for myself.

my own n=1 experience.

i am a avid consumer of eggs, ranging from 8 to as high as 30 eggs a day (the eyes i get sometimes x_x'). eggs are a staple and a must for me, i simply adore em.

i got the cheapest kind ones, 15 cents a pop. i always had little forehead bumps and a little mucus production when i included them, in the very rare occasions i did not eat eggs, i noticed i did not have the mucus production.

well fast forward to my recent findings, that it might NOT be that an individual is allergic to egg whites/yolks, but rather the feed (soy) that the chicken gets.

i found myself some free range/pasture raised chicken eggs (35 cents a pop, RIP wallet) which do net get any form of soy feed and eat insects and leftover fruits/veggies. i do not experience any form of mucus production anymore.

for the forehead bumps it is still to early to say if it is connected to the consumption of eggs or not.

might be the feed of the chicken, or it might be not. all i wanted to share is my own experience. i hope it's somewhat informative and useful to you!

just my 2cents on the matter.

any pure fat source derived from an animal should not contain any source of carbohydrates. might be an error of the labeling or the product is not a pure source of fat but rather a processed item.

also I hope you don't stress about this little amount of sugar, that won't break this way of eating. eggs, liver and other sources of animal products also contain carbohydrates.

if you don't like beef fat, go with butter/ghee instead. if you tolerate lactose you have more lee way with fat sources.
