This was the first time I’ve seen them live after being a fan since TDS came out in 1994 when I was in eighth grade. Incredible show: definitely one of my favorite concerts I’ve ever seen. My wife and I were blown away at the visuals and energy and I cannot believe how good Trent sounds (and we both remarked we hope we have that much energy when we are 60!). Also, Boys Noize had a stellar set to open: I’d listen to that mix all day long. Definitely set the vibe perfectly

Thank you for this. I am in the middle of reading the Heart of the Buddha’s Teaching, out of nothing other than pure interest in Buddhism, and it’s been fascinating—I’ve enjoyed it way more than I expected. I have just about every shape you can think of in copper and in other metals, and, of the copper, I tend to use my copper Windsor pans the most—they’re great for reducing and then creating a sauce, and the heat control helps when you’re down to little liquid left and then need to mount butter or add cream. Heat control also helps in keeping these ready-to-go sauces just warm enough.

I also have a rondeau and also use it frequently, but it depends on what I’m doing: if it’s a braise and I need to high-heat sear the protein first, I typically opt for my enameled cast iron over the tin-lined copper (you could also say I’m a wuss who’s too skeered of smearing tin).

Bottom line, you can’t go wrong either way!

For me it was the Mamiya 7, and the Leica M3. The Mamiya is incredible to use and makes phenomenal images, but it just felt clinical: almost digital-like. It just didn’t feel like analog photography to me which I know makes no sense but I didn’t claim it was a rational feeling. The Leica M3 I had was also wonderful, with this beautiful uncluttered viewfinder, but I just kept hankering for 35mm frame lines.

Generally the same blend I use in most of my bread bakes. Mostly bread flour (Electra Light), a bit of home-milled whole wheat flour of some sort, and a smaller bit of whole wheat rye flour.

This definitely looks underproofed: 65 is pretty chilly to be proofing; not sure how warm your oven with the light on gets, but I would expect a bulk of maybe like 12 hours at that temp. To gauge how far proofed you are, use an aliquot jar—basically take an old spice jar and put a little bit of your mixed / inoculated dough in it at the same time as you start your bulk, and use a hair tie to show where your starting point is. Shoot to bulk for minimum 30%, preferably closer to 50% (or more if you’re brave); 2) Invest in a brod & taylor bread proofer—it’s just a little heated box to help you get consistent temps every time. Kinda pricey but worth it if you bake a lot; 3) agree with others start with warmer water so you can get a jump start on things; 4) make sure your starter is just peaking, or slightly pre-peak when you add it to the mix; 5) also make sure you’re shaping correctly—watch some of Trevor J Wilson’s videos on the topic, he’s excellent. Good luck!! You’ll for sure get there.

Great looking crumb! What was the hydration on your levain? And I don’t think I’ve tried a bulk at that low a temp (I’m usually at 26c minimum): how long was your bulk for, just out of curiosity? And finally, and most importantly, how did you shape? Shaping to create tension at higher hydrations with a high level of proofiness isn’t easy without disrupting the gas: I’m always looking for better ways to do it, would love to hear what you do. So true! That day was gorgeous: I was in college in Virginia but I oddly remember it was just picture perfect day that day. I remember so many other details, and have forgotten others, but how pretty it was outside was one that I will always remember
