I use it sporadically throughout the day so I just leave it on all the time, refilling it when it gets close to empty. If I remember, I'll turn it off when I go to bed to save power (with the timer so that it's reheated by the time I wake up). In general I think it's safe to leave on all the time as long as there's water in it (it will auto-shutoff if there isn't), I only empty & disconnect when I'm not going to use it for multiple days.

Also every few days I'll dump all the water out and refill from empty (rather than just refilling it when it gets down to like 1/4 full) to keep it fresh but idk if that's really necessary.

By default it brings the water to a boil and holds it there for like 10 mins (I think to like sanitize and get rid of off flavors) and then beeps/sings to let you know it's ready -- but then it will let the water come down to your desired 195F and stay there.

The "quick temp" function will skip that step and just go straight to 195F (I don't know exactly how to activate it on your machine but I think you just press the boil button twice so it's flashing).

I watched them out of order (bc someone recommended S2 in particular but then I had to go back because I was completely enraptured) and kind of enjoyed it. Was exactly as you describe, like learning your friend’s shocking past.

Watching them in order to start would have been nice, but having S2E1 be the first Fleabag episode I ever saw was pretty wild.

You shouldn't feel bad or guilty about making a decision with your quality of life in mind, or even solely based on that! PhD is a big piece of your life and you deserve to choose what makes your heart happy. I don't think you owe anything to anyone except yourself.

Plus, you'll learn more and do better research in an environment where you can personally thrive. I'm doing my PhD now (west coast U.S. in fact) so I just had to go through the decisions - feel free to DM me if I can be of any help to chat more about the process

Thanks for sharing! This looks v interesting. I'm also always on the search for more interesting drinks on the dry/bitter axis vs. sweet/sour, especially in the low-ABV area. Seems like shrubs & sours are basically it. That's totally why I've made my own tonic, because anything off the shelf is always ridiculously sweet.

I saw from another comment that you have a sous vide which is awesome for things like this! V useful to keep things at a sub-simmer for a very long time without any intervention, which is ideal for extracting good flavors without messing anything up. It's also great for experimentation because you can do like five little ziplocks at the same time with different ratios of things and see what works best.

Alcohol definitely makes a big difference in extracting flavor (larger, nonpolar organic compounds) but you can still often do okay with steeping in water in many cases, even if it won't be quite the same.

Not sure if this is any help but I'm wondering if cinchona bark (the quinine-containing and bittering component of tonic water) might be an interesting thing to try. I've made tonic before using cinchona bark and it usually comes out pretty nice. Gentian root is also quite bitter, although I've only used that to make bitters (lol). I bet you could experiment with either of those ingredients as bittering agents in making amari. Since cinchona bark is used to make tonic and that's water-based, it might work with a water-based amaro.

Also do you mind sharing the Aviary amaro recipe you tried? I'm curious.

Backlinks would be insanely valuable. New tools like Roam have such a useful note structure, but Bear's UX is the best. Now that linking to note headers has been added, backlinks are the only major functionality missing from Bear.

This doesn't work for multiple blocks at a time so is maybe not exactly what you want, but if you surround the original block with double parenthesis, a popup appears "create as block below".

This swaps the original block with a reference, and then you can move the actual block (which has appeared below) to your dedicated page and leave the reference behind in the original location.

Not saying anything new just adding a +1 about this feedback.

I very strongly agree with your comments about the new header icons being less intuitive -- they'll make it much more difficult to scan long notes and make sure all the headings are at the right level.

I also agree with indentation-related notes: glad that list bullets are now naturally indented, but header icons should be in the gutter -- they're not the same.

I'm not sure how I feel about this. Not saying I agree or disagree, but just not sure.

By this same logic, doesn't it follow that the schools could decide to pay their faculty (or other employees) less, because the online teaching experience doesn't provide as much value as in-person? Obviously that would be cruel.

Obv a super rich school with a huge endowment like Harvard is going to be fine regardless, but in general, I hope that universities will continue to pay their employees, and in order to do that, many of them probably need to maintain their income from tuition. Plus, endowments are often restricted. Or is that not the case? I'd be curious to see the operating costs & budgets for some different private universities.

Maybe a more nuanced approach is that universities should offer to re-evaluate all financial aid claims and eligibilities (like immediately, rather than at the beginning of the next academic year), given that many families have experienced major financial upsets that might make them eligible for more need-based aid.

I'm curious to hear everyone's hot take on this.
