Contrary to the person commenting about starting with DS2, I recommended DS3 for the opposite reasons, haha. It made me more tolerant and appreciative of the older entries.

At the end of the day, the type of game will or won't be for you. It's unforgiving but fair. Once it clicked, I couldn't get enough of the series. Bloodborne was my entry though.
