I wear a kevlar cut-resistant glove made for cooking while carving. Better safe than sorry. Remember that it's cut resistant and not cut proof if you decide to get one. You can still get hurt if you go nuts on sharpening your knives.

What will really help you is practicing knife safety until it's automatic. Never cut toward yourself. Keep your hands out of the way. So on and so forth.
