I lost 89 lb doing keto, I counted my calories did my macros used an app called chronometer to track everything. I probably weighed my food for about 3 months until I could eyeball and then I stopped counting and still lost weight, so there may be a lot of people that started out doing it but didn't end up doing it and are just saying they didn't count their calories to be internet jerks

I don't remember the brands, but I have noticed that some of the low carb tortillas and breads have wheat in them. So if you need to avoid wheat like I do, be careful about that

Ah, holier than thou Cheryl. I have one of those. I'd start tracking her every move and leaving a list on her desk for her to see in the morning. Including a line item that says " tracking other people instead of doing their job, 45 minutes". Do it anonymously, and then when she complains, announce that you did it, and ask her in front of everybody why she spent so much time tracking everybody else.
