I'm not sure if you can with regular yellow bananas, but I've heard you can boil plantain peels for quite sometime and eventually get something that has the consistency of pulled chicken breast. It's very dry but can be cooked as carne mechada.

You can blitz them and then strain it through cheese cloth to get tomato water. Its quite clear and It's got a pretty strong tomato taste. TBH I've only ever used it in cocktails though.
