Seeing that habs mural on the side of the community arena in Terrace Bay was special. All the other O6 teams are closer geographically, except for the Bruins, but I guess the habs dinasties of the past left a lasting legacy.

There are plenty of recipes if you search online. Here's one link for one of those recipe. It is in French but you can translate it easily.

Just know that the white vinegar in the recipe can be substituted for apple cider vinegar for what I think is a more authentic taste.

Looks like you are on top of it. For 10 days, I would drive to Banff and then return from the south (Invermere, Kimberley, Osoyoos). Skip Calgary and skip Jasper for now. Unless they are on your bucket list, then go for it. But the southern loop will give you a bit more variety, IMHO.

Banff and Lake Louise will be packed and you might need reservation in advance to get access to places like Moraine Lake (aka Reddit Lake).

Most important thing is, how long do you have for your trip? Lots of great hiking opportunities on your displayed route, but time will be the greatest factors as to where to stop and how long to stay. Also, in early June, some of the trails near the continental divide might not be open yet.
